Vegan Pesto and Zucchini Spiralized Pasta
2 Cups Fresh Basil
1/3 Cup Walnuts
2 Cloves Garlic
1/2 Cup Extra Virgin Olive Oil
1- 2 Tablespoon Fresh Lemon Juice
1/4 Cup Nutritional Yeast
Salt and Pepper to taste
In a food processor, add basil, walnuts, garlic, lemon juice, nutritional yeast, salt and pepper. Pulse until finely chopped. Turn food processor on and slowly add the EVOO until you have a good consistency; not too thin, not too thick.
With a Spiralizer, make Zucchini pasta. You can prepare as a raw dish or saute pasta with EVOO and garlic. Then toss pesto into warmed pasta.  Enjoy!spiralizer
“So Easy” Curry Dip
1/2 cup vegan mayonnaise
7 drops Tabasco
2 T local honey (or maple syrup to be “pure” vegan)
2 T Organic Ketchup
2 T Grated onion
1 T Fresh squeezed lemon juice
1 t curry powder
Mix ingredients. Serve with fresh vegetables.
